The maxim 'it's easier for children to learn languages than adults' is wrong.

We all acquire language the same way: being exposed to comprehensible input (Stephen Krashen).

Children become fluent 'easily' because they receive thousands of hours of constant, comprehensible input. Replicate these same conditions with adults and the literature shows they learn much faster.

This is the basis of the AJATT method.
